How to cook: TOMATO SALAD IN A SAVOURY TUILE BASKET TOPPED WITH A BASIL SORBET
Ingredients:
25g (scant 1oz) basil leaves, plus extra
shredded leaves to garnish
7-8 tbsp extra virgin olive oil
32 red cherry tomatoes
16 yellow cherry tomatoes
FOR THE SORBET
100g (31/2 oz) caster sugar
small bunch of basil leaves
squeeze of lemon juice
FOR THE BASKETS
1 small garlic clove
coarse sea salt
50g (13/4 oz) unsalted butter
30g (1oz) plain flour
2 tbsp caster sugar
1 large egg, white only
100g (31/2 oz) Parmesan cheese,
finely grated
1 tbsp finely chopped rosemary leaves

To create the sorbet, dissolve the sugar in 200ml (7fl oz) drinking water more than moderate warmth. Stir in the basil and lemon juice. Blend inside a foodstuff processor, then pass through a fine sieve. Line a second sieve with muslin and set more than a bowl. Pour inside the basil syrup and leave to drain.

LOS ANGELES (AP) ? The President's Day holiday weekend box office was too close to call as the action tale "Safe House" and the love story "The Vow" competed for the No. 1 spot.
Based on Sunday's studio estimates, Denzel Washington and Ryan Reynolds' "Safe House" had a slim lead with $24 million from Friday to Sunday. That put it a fraction ahead of Rachel McAdams and Channing Tatum's "The Vow" with $23.6 million.
The winner won't be known for certain until Tuesday, when studios will report final numbers for the long holiday weekend. Final numbers often vary from weekend projections, which include estimates for the size of Sunday's audiences.
No matter which one finishes on top, the movie business remains unusually brisk for winter, typically a slow season at theaters. The business uptick comes after Hollywood lumbered through a humdrum holiday season at the end of last year, when audiences were apathetic about most new releases.
"I still think people don't want to stay home, and if you give them good choices, you get them out," said Nikki Rocco, head of distribution for Universal Pictures, which released "Safe House."
The top-five movies were bunched up tightly, with Nicolas Cage's sequel "Ghost Rider: Spirit of Vengeance" opening a close No. 3 with $22 million.
Dwayne Johnson's family action tale "Journey 2: The Mysterious Island" was No. 4 with $20.1 million. Reese Witherspoon's love-triangle comedy "This Means War" debuted at No. 5 with $17.6 million.
Starring Washington as a CIA traitor on the run, "Safe House" raised its domestic total to $78.2 million. Sony Screen Gems' "The Vow," which features McAdams as an amnesiac car-accident victim becoming reacquainted with her husband (Tatum), lifted its total to $85.5 million.
While "Safe House" and "The Vow" held up well, Sony's "Ghost Rider" follow-up came in below industry expectations, doing a bit less than half the $45 million the first one pulled in with its 2007 debut.
In "Spirit of Vengeance," Cage reprises his Marvel Comics role as Satan's bounty hunter, this time trying to save a child from the devil.
Released by Warner Bros., "Journey 2" is a modern take on Jules Verne's "The Mysterious Island." It padded its total to $53.2 million.
In 20th Century Fox's "This Means War," Witherspoon plays a woman who captures the hearts of two CIA agents (Chris Pine and Tom Hardy), the spy guys going from best pals to rivals as they pursue her.
Disney's English-language version of the Japanese animated hit "The Secret World of Arrietty" opened in narrower release and came in at No. 9 with $6.4 million. Based on Mary Norton's children's novel "The Borrowers," about tiny people living beneath the floorboards of a house, the film features a voice cast that includes Carol Burnett, Amy Poehler and Will Arnett.
The weekend's overall domestic revenues totaled $160 million, up 10.7 percent from the same weekend last year, when "Unknown" led with a $21.9 million debut, according to box-office tracker Hollywood.com.
So far this year, revenues have soared to $1.42 billion, a 19 percent increase from 2011's receipts.
"Every weekend this year has been up vs. the comparable weekend a year ago, so Hollywood is definitely on a roll right now," said Hollywood.com analyst Paul Dergarabedian.
Estimated ticket sales for Friday through Sunday at U.S. and Canadian theaters, according to Hollywood.com. Where available, latest international numbers are also included. Final domestic figures will be released Tuesday.

NEW YORK?? The Associated Press has learned that the New York Police Department monitored Muslim college students far more broadly than previously known, at schools far beyond city limits, including Yale and the University of Pennsylvania.
Police talked with local authorities about professors 300 miles away in Buffalo. The department even sent an undercover agent on a whitewater rafting trip, where he recorded students' names and noted in police intelligence files how many times they prayed.
Detectives trawled Muslim student websites every day and, although professors and students hadn't been accused of wrongdoing, their names were recorded in reports prepared for Police Commissioner Raymond Kelly.
Asked about the monitoring, police spokesman Paul Browne provided a list of 12 people arrested or convicted on terrorism charges in the United States and abroad who had once been members of Muslim student associations.

NEW YORK (Reuters) ? Clearwire Corp said its 2012 revenue may fall, or at best remain at 2011 levels, as it faces increased competition at its biggest customer Sprint Nextel, sending its shares down more than 5 percent in late trade.
The wireless service provider, which is majority-owned by Sprint, also forecast higher capital spending this year as it kicks off an upgrade to its network.
Clearwire forecast 2012 revenue of $1.15 billion to $1.25 billion compared with its 2011 revenue of $1.25 billion.
It also forecast an adjusted loss before interest, tax, depreciation and amortization of $250 million to $350 million and said capital spending would $450 million to $550 million, with most spending coming in the second half of the year.
For the fourth quarter, Clearwire posted a wider quarterly net loss as costs increased and it wrote down the value of certain assets including a charge related to a change of its preferred network technology.
Clearwire posted a loss of $236.85 million or 81 cents per share compared with a loss of $128.01 million, or 79 cents per share in the year ago quarter. Revenue rose to $361.9 million from $175.2 million.
Clearwire shares fell to $2.23 in late trade after closing at $2.36 on Nasdaq.

Homs, Syria (CNN) -- A massive plume of thick, black smoke billowed from the Syrian city of Homs Wednesday, punctuating the chaos that has plagued the opposition stronghold for months.
According to the Local Coordination Committees of Syria, an opposition activist group, government war planes flew over Homs and blew up an oil pipeline.
But Syrian state-run TV blamed a "terrorist group" for the assault.
Under the opaque cloud of smoke, sounds of sustained attacks -- including artillery fire and automatic machine gunfire -- echoed through the city of 1 million people, CNN's Arwa Damon reported from inside Homs Wednesday.
Opposition activists say government forces are set on flattening every neighborhood that might hold dissidents calling for the ouster of Syrian President Bashar al-Assad.
But reports of fresh violence Wednesday weren't limited to Homs.
Three bodies were recovered from Idlib province; a 16-year-old student was killed by gunfire in Daraa province; and another person was killed in Aleppo, the opposition Syrian Observatory for Human Rights said.
And military forces stormed the city of Hama, where explosions rattled two neighborhoods, the group said. The Observatory said landlines, cell phone communication and Internet access in Hama were cut off.
While residents across Syria grappled with the turmoil, the state-run Syrian Arab News Agency said al-Assad has set a date of February 26 for a referendum on a draft constitution.
Members of a committee tasked with drafting the document "reiterated their keenness on a constitution that allows ... public freedoms and political plurality in a way to lay the foundation for a new stage that will enrich Syria's cultural history," SANA reported.
Al-Assad has previously said Syria planned to hold a constitutional referendum, but reports of bloodshed at the hands of his regime have only intensified since his statement.
Meanwhile, after repeated U.N. failures to formally denounce the Syrian government, the latest U.N. draft resolution condemning Syria could go for a vote in the General Assembly as early as Wednesday.
Though a General Assembly vote would not be binding, it would mark the strongest U.N. statement yet on the violence. Russia and China have vetoed attempts to condemn Syria for the crackdown by the U.N. Security Council, whose resolutions are binding.
The draft resolution calls on Syria to end human-rights violations and attacks against civilians immediately, and condemns "all violence, irrespective of where it comes from."
But any U.N. action is long overdue, say opposition activists, who reported 49 deaths across Syria on Tuesday. The dead included three Syrian soldiers who defected, the LCC said.
Deaths took place in Idlib, Homs, Daraa, Aleppo, Deir Ezzor, Hama, Damascus, the Damascus suburbs and Latakia, the group said.
Navi Pillay, the U.N. high commissioner for human rights, said Monday most of the wounded avoid going to public hospitals for fear of being arrested or tortured. Instead, they are being treated in underground hospitals where hygiene and sterilization conditions are rudimentary and medical supplies are scarce, she said.
Pillay denounced the Syrian government's "ongoing onslaught" against its citizens.
"The nature and scale of abuses committed by Syrian forces indicates that crimes against humanity are likely to have been committed since March 2011," Pillay said.
Syria posted a banner on state TV Tuesday saying its Foreign Affairs Ministry "absolutely rejects all the new allegations in the new report by the human rights high commissioner."
The Syrian regime has consistently blamed "armed terrorist groups" for the violence in Syria.
"What is happening has nothing to do with reforms, with the spread of democracy. This is the work of armed terrorist groups that are being funded from outside," said Syria's ambassador to Russia, Riad Haddad, according to Russia's RIA Novosti state news agency.
He added: "Damascus will not let international peacekeepers into the country. Syria does not need peacekeepers. Syria has categorically dismissed that option."
CNN cannot independently confirm details of events across Syria because the government has severely limited the access of international journalists.
But the vast majority of accounts from within the country indicate al-Assad's forces are slaughtering civilians en masse, part of a brutal crackdown on protesters calling for democratic reforms.
Pillay has said at least 5,400 people have been killed in the Syrian conflict, but she said it is difficult to update that number due to the turmoil on the ground. The LCC has said well over 7,000 people have been killed.
European Union diplomats said they expect new EU sanctions on Syria by February 27, targeting the Syrian Central Bank and imposing a ban on exports of precious metals and phosphates.
Victoria Nuland, a U.S. State Department spokeswoman, said Tuesday that increasing pressure and sanctions on al-Assad's government was crucial.
French Foreign Minister Alain Juppe announced a national decision to establish an emergency relief fund for Syria, according to the website of the permanent mission of France to the United Nations. The fund, with an initial sum of ?1 million ($1.3 million), will "fund the actions of all organizations and associations wishing to help the Syrian people."
France will propose the creation of a similar fund at the international level at the first "Friends of Syria" meeting in Tunis, Tunisia, on February 24, the statement said.
Juppe said on French radio Wednesday morning that diplomats have not given up on Russia in the Syria talks.
"We are currently renegotiating a resolution at the U.N Security Council to see if we can persuade the Russians," Juppe told France Info.

PORT-AU-PRINCE, Haiti ? The United Nations Security Council has begun a four-day mission in Haiti to review the terms of its mandate.
The 15-member delegation led by Ambassador Susan Rice of the United States plans to meet with senior Haitian officials, tour an industrial park in the north and visit a police academy in the capital.
The U.N. set up a peacekeeping mission in Haiti known by its French acronym Minustah in 2004 following the overthrow of then-President Jean-Bertrand Aristide.
The Security Council last visited Haiti in 2009, which was months before the devastating earthquake in January 2010.
The delegation arrived in Port-au-Prince on Monday.

WASHINGTON ? Treasury Secretary Timothy Geithner told Congress Tuesday that the president's new $3.8 trillion spending plan would impose new taxes on only 2 percent of the nation's wealthiest families and the alternative would be to seek more painful cuts in other government programs such as defense, Social Security and Medicare.
Geithner defended the new budget plan in the face of intense attacks from GOP members of the Senate Finance Committee. Republican Sen. Orrin Hatch of Utah told Geithner that the administration's spending plan would give the country a "permanently larger, European-inspired government."
But Geithner said deeper spending cuts now would damage economic growth and push more Americans into poverty at a time when the economy is still struggling to recover from a deep recession.
Geithner told the committee that the administration hopes to send Congress next week a framework for making changes in the country's corporate tax structure.
He said the administration would not offer detailed legislative language but rather broad principles for corporate tax reform. He said the administration would propose eliminating a number of current business tax breaks in an effort to lower the corporate tax rate.
The nominal U.S. corporate tax rate is 35 percent, the highest in the world after Japan, but few companies pay that much after taking various deductions.
Obama has proposed lowering that tax rate but has not said by how much it should be lowered. The president has also proposed ending tax breaks for U.S. companies moving jobs or profits to foreign countries while suggesting tax breaks for businesses that move jobs back to the United States.
Geithner did not offer any hints about what recommendations the administration will make on corporate rates in its submission to Congress.
Congress may put off the tough decisions on the budget until after the November elections, but the spending document will certainly be used as a campaign document for Obama and a key target for Republicans running against Democrats.
Republican Mitt Romney, who is campaigning for the GOP nomination to challenge Obama in the fall, called the budget Obama released Monday "an insult to the American taxpayer." GOP candidates Rick Santorum, Newt Gingrich and Ron Paul are all advocating bigger spending cuts to control the deficits, and all the GOP candidates oppose Obama's tax increases.
"The president's budget is a gloomy reflection of his failed policies of the past, not a bold plan for America's future," House Speaker John Boehner, R-Ohio, said Monday after the budget was released. "The president offered a collection of rehashes, gimmicks and tax increases that will make our economy worse."
Republicans are arguing for deeper spending cuts and a frontal assault on the biggest drivers of the deficit, the soaring costs of Medicare and Medicaid, whose already sizable costs are projected to double in future years as baby boomers retire.
Rep. Paul Ryan, R-Wis., chairman of the House Budget Committee, said Monday that he expected the Republican-controlled House would in coming weeks pass an alternative to the Obama budget that would gain control of the deficit, not by raising taxes but by curtailing Medicare and Medicaid.
"President Obama's irresponsible budget is a recipe for a debt crisis and the decline of America," Ryan said.
Obama's cuts in Medicare and Medicaid avoid cuts in benefits and instead make modest trims in payments to health care providers. In contrast, the Republican House last year approved Ryan's plan, which would essentially transform Medicare into a voucher system in which future seniors would get a fixed amount to buy medical insurance.
The Obama budget proposes spending $3.8 trillion in the 2013 budget year, which begins Oct. 1. It would achieve $4 trillion in deficit cuts in part through restraining the growth of many government programs, adhering to the agreement Congress approved in August for spending caps to achieve $900 billion in deficit reduction over a decade.
Obama's plan also proposes additional deficit reduction in order to avoid $1.2 trillion in across-the-board cuts scheduled to take effect next January.
But the president relies on $1.5 trillion in tax increases, mainly by allowing the Bush-era tax cuts to expire on families making more than $250,000 per year, imposing additional taxes on those making more than $1 million per year and eliminating various corporate tax breaks.
The tax increases all have been rejected by Republicans.
With both parties holding entrenched positions, it is very likely that no solution will be found before the November elections, with both sides preferring to use the debate to score political points.

HousingWire tells MHProNews.com a House of Representatives subcommittee will hold hearings on three bills that could impact the Consumer Financial Protection Bureau (CFPB). Although the bill the Republican-controlled House passed in July 2011 to replace the director with a five-member commission will not likely pass in the Democrat-controlled Senate, the House subcommittee will consider the following: H.R. 1355 would move funding for the CFPB from the Federal Reserve to the Treasury Department where it will be subject to congressional financial oversight; H.R. 2081 would remove the CFPB director from the Federal Deposit Insurance Corporation (FDIC); and H.R. 3871 would prevent the CFPB from disclosing privileged information received from financial institutions. ?The reforms we seek are common sense measures that will ensure the bureau fulfills its consumer protection mission while being accountable for its actions and use of resources,? said House Financial Services Committee Chair Rep. Spencer Bachus, R-Ala.

"The Voice" returned to NBC for its second season immediately following Super Bowl XLVI and got right to business, kicking off the first round of blind auditions with coaches Adam Levine, Cee Lo Green and Blake Shelton each picking up one team member and Christina Aguilera scoring two.
Seven hopefuls stepped in front of the judges' revolving chairs, each hoping at least one would turn and ask them to be on their team. Two contestants got all four judges' approval, but one, 24-year-old Daniel Rosa from Riverside, California, didn't get a single judge to turn their chair and offer a spot and was sent home packing.

A teenager raised on a Texas farm, Rae Lynn entered the competition with one thing in mind: to win over judge Blake Shelton, who is married to country singer Miranda Lambert, a big hero of Rae Lynn's. Hey, that guy looks familiar! Lucca was at one time a Mouseketeer alongside Christina, Justin Timberlake and Britney Spears on "The Mickey Mouse Club." But it was more important here that he tore the roof off the joint with a rocking rendition of "Trouble" that earned a swivel of approval from every judge on the panel. All pleaded with him to join their team, but Aguilera seemed oblivious to the fact that she knew him as a child (a lot has happened since then, we'll give her that). After he left the stage, Aguilera realized who Lucca was and ran backstage to greet him, his wife and young daughter. She also revealed, "Britney had the biggest crush on you!"

LOS ANGELES (Reuters) ? Sony Pictures on Monday unveiled a first look at the upcoming reboot of the "Spider-Man" movie franchise, and the action-packed thriller has at least one person in the audience shaking in his Spidey suit -- the man who plays him, Andrew Garfield.
"I'm terrified right now," Garfield told an audience at a New York City movie multiplex in a presentation that was one of four similar events happening simultaneously in New York, Los Angeles, London and Rio de Janeiro.
Garfield, Emma Stone, Rhys Ifans and director Marc Webb were on hand in other locations to speak briefly about the movie.
In New York, Garfield told the audience that taking on the role of the teenage crime fighter and comic book superhero was daunting because of the responsibility for portraying a character who is beloved by so many people.
"This is so overwhelming to be representing this symbol because that's all I am, the guy in the suit. And before, it was Tobey (Maguire)," he said before joking, "Next time hopefully it will be a half-Hispanic/half African-American actor."
Garfield, 28, is known for his supporting role as Facebook creator Mark Zuckerberg's best friend in "The Social Network." But "Spider-Man" may be his biggest Hollywood break yet.
The original 'Spider-Man' movie trilogy launched Tobey Maguire to stardom and earned $1.1 billion at domestic box offices. The new movie, "The Amazing Spider-Man," hits movie screens on July 3, and will hope to beat that stellar run.
For the reboot, veteran director Sam Raimi turned over the franchise reins to Marc Webb, a newcomer to the genre having previously directed indie romantic comedy, "500 Days of Summer."
In "Amazing Spider-Man," Parker goes searching for the reason his parents disappeared when he was a child. His pursuit brings him face to face with his dad's old partner, Dr. Curt Connors (Rhys Ifans) who transforms into the villainous Lizard.
Peter Parker also gets a new love interest named Gwen Stacy, who essentially takes the romance duties given to Kirsten Dunst as the character Mary Jane Watson in the previous films.
Speaking from Rio de Janeiro, Stone called Gwen the yin to Mary Jane's yang. "Gwen falls in love with Peter Parker, and I think Mary Jane falls in love with Spider-Man," said Stone.

WASHINGTON ? President Barack Obama's call to shrink the military, shut bases and cancel weapons to meet the demand for budget cuts tests the resolve of lawmakers who came to Washington determined to slash the deficit.
A new national security strategy reflecting an end to decade-long wars in Iraq and Afghanistan offers the opportunity to reduce defense spending and government deficits by hundreds of billions of dollars over the next 10 years ? but at a cost of thousands of jobs in lawmakers' states and districts.
Democrats as well as Republicans are resisting, looking to protect home turf from California, where the Global Hawk unmanned aircraft is built, to Wisconsin, home to speedy Littoral combat ships, to military installations all across the country.
"It's funny that we want to save money everywhere except when it can bother us," Sen. Lindsey Graham, R-S.C., said in an interview. Graham is a member of the Armed Services Committee and one of the few lawmakers who favors another round of domestic base closings.
Defense Secretary Leon Panetta recently outlined a $525 billion budget for next year that's $6 billion less than the current level. The proposal is the first step in the deficit-cutting plan that Obama and congressional Republicans agreed to last summer that calls for a reduction in projected defense spending of $487 billion over 10 years.
"Make no mistake, the savings that we are proposing will impact on all 50 states and many districts, congressional districts, across America," Panetta said at a news conference spelling out the new strategy. "This will be a test, a test of whether reducing the deficit is about talk or about action."
Obama submits his complete budget proposal to Congress on Feb. 13, but Panetta's preview included enough details to stir alarm on Capitol Hill.
The budget calls for canceling the Air Force's Global Hawk program, a high-altitude unmanned aircraft used for intelligence, surveillance and reconnaissance. The Pentagon said the aircraft's cost at $215 million apiece make it less cost-effective than the existing U-2 spy planes that burst on the scene in the 1950s and were critical in finding Soviet missiles in Cuba in 1962.
Northrop Grumman, the aircraft's prime contractor, builds the planes in Palmdale, Calif., located in the district of the House Armed Services Committee Chairman Howard "Buck" McKeon.
The aircraft is based at Beale Air Force Base, near Marysville, Calif., soon to be in the redrawn congressional district of Democratic Rep. John Garamendi, a member of the committee. The program also is one of many that the Air Force manages at Wright-Patterson Air Force Base in the district of Rep. Michael Turner, R-Ohio, another committee member.
McKeon has criticized the overall military cuts but has not commented specifically on the Global Hawk. The Republican did send a clear message to the Pentagon and the White House when he promised to hold hearings on the budget "keeping in mind that while the president proposes, Congress disposes."
Garamendi questioned the Pentagon's rationale, especially since six months ago it called the Global Hawk a critical program with no alternatives "that will provide acceptable capability to meet the joint military requirement at less cost."
"Now we're going in the other direction and I'm going, `guys you got some explaining to do. What changed? What is the reason here?" Garamendi, who has been a strong proponent of Beale AFB, said in an interview. He called the U-2 an "incredible machine, but it can't stay over the target for 20 hours. Global Hawk can stay there for a day or more. So explanations are needed."
Deputy Defense Secretary Ashton Carter's reason at the briefing with Panetta: "That's the fate of things that become too expensive in a resource-constrained environment."
But just a few months ago, the Pentagon had said that "when analyzed in the context of the Global Hawk mission, the U-2 costs $220 million per year more than the Global Hawk."
Panetta also called for slowing the pace of building new ships and speeding up the retirement of older ones. The Pentagon blueprint said it would reduce the purchase of Littoral combat ships, the speedy boats built at shipyards in Wisconsin and Alabama, by two. It didn't provide more specifics.
The ship is built in the city of Marinette on the Wisconsin-Michigan border, and has meant hundreds of jobs in the two states. While Wisconsin has an unemployment rate of 7.1 percent, Michigan's jobless rate of 9.3 percent is well above the nation's.
The chairman of the Senate Armed Services Committee is Michigan Democrat Carl Levin, who declined to comment about specifics of the budget proposal. Freshman Sen. Ron Johnson, R-Wis., praised the Littoral as a ship that "just keeps us a little more nimble."
Contributing to the nervousness on Capitol Hill ? and in the defense industry ? is the prospect of deeper cuts in the military. The deficit-cutting supercommittee's failure last fall to come up with at least $1.2 trillion in savings last year means automatic, across-the-board cuts for defense and domestic programs beginning next January.
For the Pentagon, that would mean an additional $492 billion reduction over a decade on top of the $487 billion.
Top Republican senators have proposed reductions in the federal workforce and a freeze in federal pay to delay the automatic cuts for a year. Both the White House and congressional Democrats have rejected any move to undo the automatic cuts absent a far-reaching deficit-cutting plan.
Jeremy W. Devaney, a senior equity analyst in defense technology for BB&T Capital Markets, said contractors look at Congress and the administration, and "they don't believe sequester is going to happen, but they don't know how it's not going to happen."

In a large pot of boiling, salted water, add pasta and cook according to package directions. Drain and place back into the pot off heat.
Meanwhile, in a medium saucepan, heat oil over medium. Stir in jalape?os, serranos and garlic ? cook until tender, about 5 minutes. Add to the pot with the drained pasta.
Preheat the broiler.
In the same saucepan, add milk, cream cheese and onion ? heat over medium-low, stirring, until very smooth, about 5 minutes. Pour in to the pot with the pasta and add the cheese ? season with salt and fresh ground black pepper, tossing well to coat. Scoop mixture into a casserole dish coated with cooking spray. Place under the broiler and bake until lightly browned on top, about 3 to 5 minutes.
